Once in the Mash Tun, the grist is mixed with hot water, which produces a sweet liquid known as the "wort".

This is the stage where the Yeast is added. Here begins the process of converting sugar to alcohol.

The wort is transferred to the kettle and boiled. It is in this stage that the Hops are added.

Checking the statistics of pH level, specific gravities and temperature levels. This stage is repeated throughout the brewing process

Fermentation Detail
This is the stage where the yeast is added, which begins the process of converting sugar to alcohol. This stage occurs in the fermentation tanks

Beer Filtration Detail
At this stage, the beer needs to be filtered.
The Wils Pils, Tom's Amber Ale, Raging Bull and Light Lager are filtered directly from the storage tank.
The Sou' West Wheat and Settler’s Pale Ale are not filtered following fermentation, but undergo a secondary fermentation in the kegs.

Bottle Line & Packaging Detail
The beer is now transferred to kegs where they are either kept for the taps or bottled and packaged for sale.
